Hello, I’m Martha Stewart. I decided to make this Peach Oatmeal Bake. It’s so good, you won’t know it has bananas in it to make it healthy!
4peaches (or frozen bag)
1tbsp lemon juice
1tsp corn starch
1tsp sugar
1/4 cup water(none if frozen)
cinnamon
2 overripe bananas
1/4 cup unsweetened applesauce
2tbsp sugar
1/2 tsp cinnamon
1tsp vanilla extract
1/4 tsp kosher salt
1 cup almond milk unsweetened or cashew or skim
1.5 cups old fashioned oats
1.Pre Heat the oven at 375 degrees
2. peel and chop the peaches into small pieces, put the peaches into the small sauce pan with the sugar, and turn on the heat on medium
3. combine the corn starch and the lemon juice and water to form a slurry, then add it to the peaches
4. cook the peaches for 10 minutes, or until they are broken down into a compote-jam texture. set aside.
5. spray a small baking dish or casserole with cooking spray.
6. add the bananas to the bottom of a mixing bowl, and mash them with a fork
7. add the applesauce, sugar, baking powder, salt cinnamon, and extract and stir to combine.
8. add the milk. whisk together.
9. add the oats. fold in.
10. pour the mixture evenly into the baking dish.
11. add the peach topping to the top of the oatmeal, in an even layer. Sprinkle with more cinnamon.
12. bake at 375 for 35-40 minutes or until set!
